Beef Stew in the Slow Cooker Recipe:

2 to 3 lb. chuck roast (feeds 8 to 10 - and chuck roast has more flavor and ends up most tender to me)

2 pkgs. Lipton Onion Soup Mix

2 cups water

2 to 4 beef bouillon cubes (I use 2 of the larger ones or 4 of the smaller ones)

2 cups baby carrots

20 new potatoes (sliced in half) – feel free to use more or less depending on your family’s tastes

 

How To Make Beef Stew:

We had planned to have Beef Stew for Sunday Dinner yesterday, so I put the slow cooker on the lowest setting (10 hours on mine) and placed all ingredients except carrots and potatoes in the night before and placed the lid on. (Potatoes and carrots don’t need to cook as long as the roast.)

Then, the next morning I added the new potatoes (sliced in half) and the baby carrots. If you need a little bit more water to cover the vegetables go ahead. I find that even if you don’t cover them completely, they still cook fine and they cook down a bit anyway.

Note: I had been watching The Pioneer Woman on TV Saturday and she showed how she browned her vegetables in olive oil before adding them to her pot roast. It looked so good I decided to try it. The title of my next post should be How To Age Your Hands in Two Easy Steps. Please remember to dry your potatoes first and be very careful if you plan to put them in hot, burning oil. This is how I got a quarter-sized blister and other burns on my hand yesterday. Ouch! On the bright side, the vegetables do get a nice brown coating and they don’t seem to get as mushy. Take extra care working with hot oil. Remember, this is an extra step – if you wanna make things easier on yourself skip browning the veggies. It tastes exactly the same anyway.

The whole meal ending up being ready just in time for Sunday Dinner and I didn’t have to do much work. This Beef Stew Recipe turns out delicious and tasty every single time and is one of Tim’s favorite meals ever.

Directions:

Add chuck roast to slow cooker. Add soup mix, water and bouillon cubes. Cover and turn slow cooker on Low (10 hours) setting. About 4 hours before you plan to serve your Beef Stew, add carrots and potatoes. Serve and enjoy. You’re gonna love it!
