Redneck Caviar

If you can figure out a way to mix tortilla chips and black-eyed peas and call it an appetizer, you might just be a redneck.  

As for the “caviar” part, true rednecks might not dip into a bowl of fish eggs … but, we consider black-eyed peas a delicacy. Served in the finest homes in Dixie.

You don’t even have to be a redneck to eat it. Even my yankee friends love it. Give it a try at your next picnic!


2 (15-ounce) cans black-eyed peas, drained very well

1 (15-ounce) can whole kernel corn, drained very well

1 (10-ounce) can diced tomatoes and green chiles (I used Ro-Tel – widely available)

2 cups chopped red bell pepper

1/2 cup chopped onion (or a little onion juice)

1 (4-ounce) jar chopped pimentos, drained

1 (8-ounce) bottle Italian dressing OR Ranch dressing

¼ tsp. salt

¼ tsp. garlic salt

¼ tsp. garlic powder


In a large bowl, combine all ingredients and stir gently to combine. Refrigerate mixture overnight. Serve with multi-colored corn chips for a colorful presentation. We liked the lime flavored chips best.

Substitutions and additions:

You can substitute black beans for the black-eyed peas.

You can add bacon bits.

It’s also great with fritos.

You can put it in an omelet.

Or, heat it up and use it as a baked potato topper. Be creative and enjoy!  Love, Cindy

    Haven’t thought about using Ranch dressing in this! hmm definately something to contemplate! Hubby might enjoy this with a couple of modifications!
